If you do it right, there are many health benefits to a vegetarian or vegan lifestyle. The Meatless Monday campaign encourages us to go meatless once a week and choose environmentally friendly meat-free alternatives (beans, tofu, nuts, seeds, etc.). The goal is to reap the health benefits, as well as, reduce your carbon-footprint.
Health Benefits: may reduce risk of heart disease and cancer, manage weight, and extend longevity.
Environmental Benefits: reduce carbon footprint (UNFAO estimates the meat industry generates ~1/5th of man-made greenhouse gas emissions), minimize water use ( it is estimated that 1,800 to 2,500 gallons of water go into a single pound of beef vs. 220 gallons per pound of tofu), help reduce fossil fuel dependence (about 40 calories of fuel energy go into every calorie of feed lot beef vs. 2.2 calories of fossil fuel energy needed to produce one calorie of plant-based protein).
Choose to go Meatless every Monday! Look for Meatless Monday options in the dining halls, and vegetarian and vegan selections everyday!
